Mr. B's in Brookfield was the pick for dinner while I was in town for work, and it delivered the kind of steakhouse night that reminds you why the classic version of this still works. The ribeye was the order and it was exactly right, thick cut with a deep, caramelized crust from the wood-burning oven and a rendered edge that made every bite worth slowing down for. The bacon-roasted potatoes on the side held up next to it, and a small pour of the béarnaise finished the plate without covering what the kitchen had already done. The house old fashioned deserves a mention on its own. Balanced, spirit-forward without being harsh, and clearly built by someone who takes the drink seriously rather than dressing it up. It set the pace for the meal in the best way. Service was impeccable from start to finish. Attentive without hovering, well-timed on every course, and the kind of quiet expertise that lets you actually settle in and enjoy the room instead of tracking down anyone for the next thing. The dining room does its part too, green checkered linens, candlelight, warm woods, a setting that feels grown up without feeling stiff. I saved the cheesecake for later since I was heading back to the hotel, and it held every bit as well the second time around, which is a real test for a dessert. Best for a business dinner where you want the room and the meal to do the work for you, a special occasion night, or anyone who appreciates a classic Wisconsin steakhouse executed at a high level. Easy call to come back next time I am in Milwaukee.
