Atmosphere and decoration was lacking in this restaurant. Coffee was OK and pastries could have been better (did not feel fresh of the morning). Would have chosen another option for my breakfast.

I was excited to come back to this bakery. Unfortunately, the croissant I had was very disappointing. It was doughy, without the airy honeycomb structure you expect from a well-laminated croissant, a clear sign that it was underproofed. Without proper proofing, a croissant can’t achieve the light, airy layers that make it special. On top of that, it seemed to be at least 10 hours old: the butter had soaked into the dough and hardened, instead of staying soft and fluffy as it should in a fresh pastry. In my view, a croissant in this condition really shouldn’t be sold. The pain au chocolat was a bit better. Its structure was closer to correct (though not perfect), and the chocolate filling was enjoyable. Still, the dough itself lacked taste and depth of flavor, which made the pastry fall flat overall. I love seeing authentic French pastries offered, but these ones need more attention to proofing, lamination, and freshness to really shine.‐ ------- My previous 4 star review A great place for a coffee and some French pastry. Some of their food is just delicious. Can be busy some times, but I have not figured out when as sometimes it is really empty.

The French Baker is an institution in Greytown and Wairarapa. Started many years ago by Moise Cerson and now for an equal time by Rusty who greets you often by name. A great host. A meeting place for locals and a great stop to stop for an excellent coffee and pastry for all.
